Introduction

The black seeds in the centre are inedible when raw. Mamey Sapote is only edible when fully ripe – you can determine its ripeness by squeezing it; it should give slightly.

Start by slicing the fruit lengthwise and removing the large seed from the centre. The flesh can be enjoyed directly, either scooped out with a spoon or cut into cubes.
